Dave Beran Is Keeping His Head Above Water

The Pasjoli chef talks about reopening (three times), reassessing what matters, and relinquishing control.

david beran yacht

Dave Beran is trying not to be weird about it, but he's staring across the dining room at your empty water glass and probably wishing he could fill it with his mind. So many things — cosmic, personal, and every shade in between — have been knocked askew by the pandemic, but this one is just scratching at his soul. Beran (F&W Best New Chef '14) has worked in restaurants since his teens, when he was "toast boy" at a diner , through tenures as executive chef at swankity joints like Alinea and Next, and now his own restaurant Pasjoli in Los Angeles, and certain things are just muscle memory for him. You cut the onions for the soup just so. You plate the pressed duck down to the millimeter. You make elegant conversation sussing out how much people actually want to spend on wine. And, perhaps most core to his vision of hospitality, you keep your guests' water glasses filled.

Safety protocols vary city to city, if not hour by hour, so circumstances may have changed as you read this, but as of a Friday morning phone call in mid-April, L.A. County was not allowing servers and sommeliers to pour water or wine beyond the first glass or do anything tableside for restaurant guests — which was a hallmark of Pasjoli from its inception. As all the adaptations, pivots, accommodations, and (often expensive) points of hygiene theater washed over Beran and his team over the course of the last year-plus, they bobbed, weaved, and generally sailed ahead with grace. But this particular wave caught him square in the chest. He's not letting it knock him down.

Constant change is core to Beran's cooking ethos. Like most chefs who work in tune with the seasons, he and the team at Pasjoli had been in a permanent state of menu assessment and adjustment since long before the restaurant opened as an "elevated neighborhood bistro" in September 2019, but he's always taken it to an extreme. As executive chef at Next in Chicago, Beran was tasked with wholly reinventing the restaurant's concept each "season," shifting from themes of "Childhood" to the food of elBulli to Sicilian then kaiseki cuisine in a single calendar year. At Dialogue, his recently-shuttered 18-seat Michelin-starred solo venture also in Santa Monica, Beran and team were driven by a desire to continually interrogate everything they'd come to understand about fine dining, and remain in endless dialogue with nature (and presumably vendors of the bounty thereof). But this was all change by choice, proactive reinvention as praxis, with every single new element considered, reconsidered, and eternally evaluated. That didn't mean he wanted to close and reopen Pasjoli three times over the course of a year and a half, but he's embraced the opportunities it's presented.

"We always try to look at the positive side of everything, because it's easy to look at all the negative stuff. But it's almost like in being forced to rethink and open the restaurant three times, the restaurant gets substantially better each time," Beran says. "You have all these ideas of what your restaurant wants to be. But usually when you go into a restaurant the first time, it's in its infancy. It takes two or three years for a restaurant to really understand what it wants to be. I wanted everyone to order their own food, and not share. I wanted to branch away from the idea that we're going to get all this for the table, and we need this and that. Obviously within a month, I realized it didn't matter how hard I fought, it was never going to change. I feel like the best version of a restaurant is towards the end of its second year, when you have the confidence to just be what you want it to be without feeling like you have to uphold these obligations to your diners."

He continues, "Each time we reopened, it was like, 'Well, we can't pour water tableside, or pour wine at the table for that matter. Let's just stop being frustrated about it, and let's figure out what else we can do instead for a guest experience.' We had to shrink the menu. Then, you start finding the importance in what you really want to keep on the menu, because there's four of us who work the line instead of the seven originally, plus two chefs on the outside of the line."

Financially, he says, "It sucked," but the enforced strictures brought some clarity. "It's really forced us to rethink the importance of the restaurant, and how it connects. Not from me feeling like my ego's fulfilled, but rather how it connects with diners and the neighborhood. Because when we first opened, it didn't connect with the neighborhood at all."

That started with the price point, which Beran says is still not inexpensive by any means, but there were other barriers. "Initially, we didn't have any patio out front. Our host stand was inside. The front door was always closed. It's a pretty aesthetic on the outside of the restaurant, but nothing about a restaurant like that makes you want to peek your head in and just see what it looks like. It just wasn't a community-feeling restaurant in Santa Monica initially; it was definitely a destination," Beran says.

He took the note, and as COVID-19 regulations came into play, Pasjoli adapted to be the restaurant the neighborhood needed. "Once we had the patio and moved the host stand outside — with dog treats in the host stand — all the neighbors got to know us. We started opening for lunch on Friday, Saturday, and Sunday at a much lower price point. Now we have regulars who come twice a week for lunch that live down the street who never would've come for dinner, or never would've come had we not been outside."

That takes physical and financial readjustment, sure, but also a nudging aside of ego — often a tall order for a chef-owner who's spent their whole career and countless cash to finally be the one to call the shots. "I think the first time we opened, it was such a push to prove to the world that this was a French restaurant, to the point where we're doing things like, 'Here's your main dish. Every main dish comes with a side dish,' and they're all like, 'Here's a byaldi that is the style of this, and an Escoffier dish of this.' It was awesome, but it was our version of other people's established French food," Beran says.

He used the pause to ground himself and look around. This restaurant was in California, not Chicago or Provence, and he needed to embrace that, starting with the produce. "I had this whole epiphany before we reopened the second time where I was looking at the French food that I love, and some of my favorite French chefs. You start looking at the stuff that they talk about, or you look through their books, or even Alain Passard's Instagram for that matter. He's glazing turnips in an apple cider reduction. That's not in the Escoffier book; that's just his food, and it happens to be French,"

He started to ask himself, "Why aren't we just cooking our food? Our food is French at this restaurant. Now, we have a beurre blanc that has miso in it. Because of my time at Next, for example, I had so many different influences. Why weren't we using all of that as our own influence, but treating it as our version of the French food?"

This was all freeing for Beran in a way, allowing himself and the team to scrutinize practices in a way they might not have while things were in full swing. "When you move into a new house, you're less likely to redecorate your current house, and rethink what you have on the walls than if you move into a new one. Obviously, everything builds upon what you've done previously. But fortunately, as a by-product of having to close, we could really assess the value of what worked and what didn't so that we didn't waste time when we reopened."

Beran closed his other restaurant, Dialogue — a plan already in the works — brought everyone who wanted to over to Pasjoli, and with the full input of the team, developed a compensation model that allows more hours and greater pay for everyone on staff (minus himself). "I've pretty much been working six days a week since the pandemic started. Because as an owner, you have to start looking at things and saying 'I'm almost like free labor,'" he says.

"We've really prioritized the employees in giving more hours. We collectively as a team opted to shift our labor a certain way, so rather than hiring more people, the management, as a collective decision, opted to work a little more. I'm the only one who works six days. Everyone else is still five days," Beran says. "If you could hire 12 people, and give them all three days a week, inevitably they're going to look somewhere else for two to three days a week. Or if you can look at all of them and say, 'I can give you five days a week with eight to nine hour shifts, so you can a little bit of overtime,' then you have a full time job with healthcare that you can always come to, and you don't have to split your time." It's better for their mental health, he says, because they have a sole job they can rely on without having to worry about stitching together hours, possibly at a place where they're reliant on tips, or in a non-tipped position.

"During the pandemic, diners were like, 'Why don't you have a tip line? We want to leave …' We're like, 'Service is included,' but they wanted to leave more. We have an optional tip line. We printed very clearly on the bottom of the menu that service is included, and it's completely optional. And we made stamps that we stamp right over the top with red ink that says, 'This is optional. Service is included in the price.' And on average, people leave five to ten percent for the staff," Beran says.

Additionally, California recently passed a law saying that the back of the house can be included in the tip pool with no stipulations. "We talked to everyone on staff, and we have a whole structure system that includes the back of the house, and isn't an 80/20. It's a very fair split. Everyone agreed in silent or private vote. It wasn't like anyone was pressured into it. And because of that, everyone on the staff is seeing extra money."

Beran was adamant that care of the staff be the responsibility of the restaurant, rather than a pressure on the diners. "If we're going to progress as an industry that's a professional industry, I think we have to act as other professional industries do. And that included health care, that included our responsibility to our employees, not the guest's responsibility." And that model will stay in place even after the pandemic is (touch wood, cross fingers) a distant memory.

But back to the water. This change in staffing has forced the Pasjoli team to reassess how that precious labor is allocated. This doesn't mean cutting corners or dropping standards — something that is anathema to Beran, who'd probably rather forgo sleep entirely than serve a dish he deemed subpar—but rather doubling down on the things that are within the restaurant's control, and skimming off some things he'd always taken as rote. The meal kit version of the pressed duck for which the restaurant is famous included components for the sauce, and copious cooking instructions (including videos), but the sauce was curdling when people attempted to make it at home. Now the team focuses on making the best possible version of the sauce, and it's sent along fully made. The finished dish might not be as pretty as at the restaurant, but that's OK.

"We relinquished control, and this became a blanket thing for all the food that we're serving currently. I think our food is still pretty for what it is, but this is less drive into the aesthetic, and more to do with foundation, flavor, and depth, so that even if you shake the entire to-go container, and make a bowl of chili out of it, it's still going to taste awesome," Beran says.

Rather than julienning a 75 pound sack of onions for French onion soup, which would take a team of two three hours to do, he looked over at an attachment on the Robo Coupe. "It cuts them, and it does 65-70% as good of a job. The cut is not perfectly uniform every time, but we're going to cook this soup for eight hours. It's not that I don't want to adhere to that fine dining mentality, and I'm getting lazy," Beran says. "It's that same assessment now I freed up essentially six hours of labor. What else can that six hours of labor do?"

So while it's driving him up a wall to see a bottle on the table, or a semi-filled glass, Beran knows that he doesn't have any say over the matter, that there are perhaps are more pressing tasks at hand (he notes that previously, there was a person in each section whose time was primarily taken up with pouring water), and that he has to just deal with it. The diners are given a list of regulations when they make their reservation, and honestly, as long as he doesn't point out the elephant in the room, they may not even notice.

"I think as soon as we don't make it weird that we don't pour your water," Beran says. "I don't think guests are like, 'Wait, why didn't you pour this?' If I made it awkward, if I was like, 'Uh, I can't do this, but I'm sorry,' then guests are like, 'Oh, that's weird.' So I just need to not be weird about it."

Nizhny Novgorod: A ‘Russian Detroit’ from 19th to 21st centuries (PHOTOS)

Dmitrievskaya Tower through the centuries.

Dmitrievskaya Tower through the centuries.

Founded in 1221, Nizhny Novgorod (260 miles east of Moscow) is still one of the most visited and populated Russian cities (it has more than 1.2 million inhabitants). Its ancient kremlin, cozy paved streets with centuries-old buildings (a regular city plan was adopted after Empress Cathrine the Great visited the city in 1767) and scenic views of the Volga River warm the hearts of locals and tourists. By the way, many people confuse it with Veliky Novgorod (established in 859) in the north-west of Russia. In Russian, the word ‘Novgorod’ literally means “new city” and, luckily, there are only two in the whole country: ‘Lower new city’ and ‘Great new city’. One of the oldest and largest automobile plants that produces GAZ cars is still located in Nizhny (Russians often omit ‘Novgorod’) - and that’s why the city is often known as the ‘Russian Detroit’. In Soviet times, it bore the name of main Soviet writer Maxim Gorky , who was born there.

And despite its steel and metal history, today, Nizhny Novgorod has the poetic epithet of the capital of sunsets. We compared some vintage and recent photos of the city.

Dmitrievskaya Tower in 1913 and in 2021.

The stone citadel of Nizhny Novgorod was built in the 16th century around the Chasovaya (Sentry) Hill. Here is the most famous view of the fortress with the Dmitrievskaya Tower. Previously, a moat was dug in front of the tower, which was filled with water. At the end of the 18th century, the moat was filled and the tower sunk about 6 meters into the ground. The tower received its a-la Rus facade only at the end of the 19th century.

Skoba square, 1957 / Monument to Minin and Pozharsky nowadays.

On Moscow’s Red Square, there is a monument to Minin and Pozharsky , who were the leaders of the people’s militia against the Polish intervention of 1611. Interestingly, exactly the same monument stands in Nizhny Novgorod! And all because the militia gathered there. City official Kuzma Minin called on all residents to fight and Prince Dmitry Pozharsky was chosen as the militia head. The date of Moscow’s liberation from the Poles (November 4) has been celebrated as National Unity Day in Russia since 2005. In the same year, Nizhny Novgorod’s Skoba Square, where the militia gathered, was renamed ‘National Unity Square’ and a monument to the two national heroes was erected there, as well.

View on Nizhny Novgorod kremlin, Dyatlov hills and Chkalov stairs, 1886 and now.

With 560 steps, these are some of the longest stairs in Russia! The site where this staircase was built was called the ‘Volga Downhill’ and was very popular among locals, since it had one of the most picturesque views of the Volga. The stairs, named after a pilot named Valery Chkalov, connect the upper and lower embankments in the historical center of Nizhny Novgorod. Among the architects was Lev Rudnev , who worked in the Stalinist Empire style and designed the Moscow State University and the Palace of Culture and Science in Warsaw.

4. Kremlin funicular

Kremlin funicular in operation... and in ruins.

Amazing: At the end of the 19th century, in the center of Nizhny Novgorod, two funiculars operated near the kremlin. They literally worked on water. Imagine a water tank in the car: filled at the upper station, empty at the lower station. When one car went down, the lower one went up under its gravity. They would move at the same time. The funiculars were abandoned in the 1920s, when a tram line was completed. Today, only ruins remain in place of the historical funiculars, although the city administration has already promised to recreate this type of transport. There still is one funicular operating in Nizhny Novgorod, which connects it with the city of Bor on the other side of the Volga River.

5. Bolshaya Pokrovskaya Street

Bolshaya Pokrovskaya street in 1880s and 2021.

The main street of Nizhny Novgorod has undergone many changes over the centuries. Before the revolution of 1917, it was the favorite area of nobles to settle. Along the street, you can still see old stone mansions, theaters, churches. One of the most beautiful buildings is the main state bank built in Neo-Russian style. It was opened for the 300th anniversary of the Romanov house in 1913. At the beginning of the 20th century, a tram line passed there - one of the first in Russia. But, since the 1980s, the street has become pedestrian only.

6. Rozhdestvenskaya Street

A historical tram line has been preserved on the other oldest street, Rozhdestvenskaya. However, now it’s a tourist transport and it operates only in summer. The street has also preserved its appearance since pre-revolutionary times. There, you can see almost all the same buildings that were in Tsarist Russia, including the Stroganov and Golitsyn estates, the Church of the Nativity of the Blessed Virgin Mary and Blinov Passage - the first shopping center outside of Moscow and St. Petersburg.

Nizhny Novgorod is one of the seven Russian cities with its own underground transport. The metro here was opened in 1985: In Soviet times, only cities with the population over 1 million residents had a subway. It consists of only two lines and sees about 115,000 commuters a day, which makes it less popular than ground transports. In the near future, there are plans to build new stations on the other side of the Oka River.

The Referees Tower built in the Neo-constructivist style on the embankment of the Grebnoy Canal was built in 1988 for the 2nd All-Union Youth Rowing Games. Over time, it was severely destroyed and only recently restored, for the 800th anniversary of the city. Of course, with cafes and places to relax. It’s beautiful, isn’t it?

The GAZ (Gorky Automobile Plant) plant in Nizhny Novgorod became one of the first in Russia. Early models of trucks and passenger cars were produced under a Ford license. In the 1920s-1930s, American specialists also helped to build the plant itself and the socialist city for workers In the post-war years, the ‘Volga’ and ‘Chaika’ cars were the most expensive among Soviet cars - a citizen’s dream! These days, the plant still operates, but produces mainly trucks and minibuses.

10. Alexander Nevsky Cathedral

High water in Nizhny Novgorod, 1890s/ The same district nowadays.

The Cathedral Church of Nizhny Novgorod is located in one of the most picturesque places of the city - on the arrow of the Volga and the Oka rivers. People used to call it ‘fair church’, since its parishioners were merchants who came to fairs from all over the country. It also was only open in the summertime. In the Soviet years, the iconostasis was dismantled for firewood to heat houses and then it was even planned to demolish it altogether and build a lighthouse and a monument to Lenin on the same site. Nevertheless, the cathedral was preserved (in the 1980s, it was restored by volunteers) and, in 2009, was reinstated as the city’s main church.

The Top 12 Things to Do in Nizhny Novgorod, Russia

Take a first-rate trip to Russia's fifth city

Ershov_Maks/Getty Images

Although it's Russia's fifth-largest city, you could be forgiven for never having heard of Nizhny Novgorod. Notwithstanding that another Russian city is simply called " Novgorod ," the current name of the city just doesn't have a memorable ring to it. (By contrast, its name during the Soviet years — Gorky, like the famous author — was much more iconic.) At any rate, this city of just over a million around six hours east of Moscow is more than worth a visit. These are just 12 reasons why!

Tour the Kremlin's 13 Towers

Like most every other city in Russia, Nizhny Novgorod is home to a Kremlin. (The word "kremlin" means "citadel" in Russian, and has nothing to do with the modern Russian government) One thing that elevated the Kremlin of Nizhny Novgorod above others in Russia (with the possible exception of the Moscow Kremlin and one or two others), however, is the fact that its wall has 13 towers. During the summer months, at least one free walking tour per day operates from the main entrance of Nizhny Novgorod's Kremlin.

Climb Russia's Longest Staircase

Named for one of the most famous Russian pilots of the early aviation age (Valery Chkalov), the Chkalov Stairs connect two of Nizhny Novgorod's public squares, which sit on the upper and lower embankments of the Volga River, respectively. Built in 1943 (during the period when Nizhny Novgorod was known as Gorky), the Chkalov Stairs currently have the distinction of being the longest staircase in Russia.

Go Wild at Limpopo Zoo

One thing that surprises many travelers to Nizhny Novgorod is how amazing its zoo, colloquially known as Limpopo is. In addition to being home to a tropical botanical garden (which, not surprisingly, is indoors), the zoo hosts a variety of reptiles, mammals and birds. There's also a small sculpture park on the grounds of Nizhny Novgorod's zoo, including both original and replica pieces.

Shop (or Just Stroll) Along a Storied High Street

Bolshaya Pokrovskaya Street has been the de-facto "Main Street" of Nizhny Novgorod for more than 200 years. Well, minus the Soviet Union period, during which the cafes that once (and now) lined it became somewhat worthless, since intellectual conversations were basically forbidden. These days, you can come here for a cup of Russian tea then shop at the dozens of boutiques you'll find on either side of the street.

Sun Yourself at the Spit

Nizhny Novgorod sits at the confluence of the Oka and Volga Rivers, with the triangle of land at the point they meet being known as the Nizhny Novgorod Spit. Ignoring the unfortunate double-meaning of its name for a moment, this is actually a wonderful place to get a tan, if it's summer in the city and the sun happens to be shining. Even if not, photographers will enjoy a trip here for a view of the Kremlin and city center across the Volga.

Marvel at the Open-Air Museum of Rozhdestvenskaya Street

Like Bolshaya Pokrovskaya Street, Rozhdestvenskaya Street has long been one of the most important streets in Nizhny Novgorod. However, while the former has become a primarily commercial artery in recent decades, the charm of the latter is in its well-maintained buildings, which hearken back to the mid-18th century. In fact, some locals go so far as to consider Rozhdestvenskaya Street an "open-air museum."

Ride Russia's Newest Cable Car

Russian investment in infrastructure isn't quite as dramatic as that of, say, China, but the Federation has nonetheless built a selection of interesting and modern transportation systems since the fall of the USSR. Among them is the just-opened cable car, which travels from the center of Nizhny Novgorod over the Volga River to suburban Bor. At any rate, a ride over the river and back is definitely worth inclusion on your list of things to do in Nizhny Novgorod.

Taste Traditional Shchi Soup

Shchi is one of Nizhy Novgorod's most delicious local specialties, available in most every local restaurant that serves Russian food. From above, a bowl of shchi seems incredibly complicated, with a colorful palette that suggests the inclusion of dozens of diverse ingredients. In fact, the magic of shchi is in its simplicity. Building on the traditional pan-Russian recipe of cabbage, pork fat and salt (yes, just three ingredients), locals in Nizhny Novgorod sometimes add minced meat or egg whites as bonus items, then top the tangy soup with a dollop of sour cream.

Survey Amazing Russian Orthodox Architecture

Think the only amazing Russian Orthodox churches are in Moscow and St. Petersburg? Think again. Nizhny Novgorod boasts several amazing examples of Russian Orthodox architecture. From the brilliant golde domes John the Baptist Cathedral near the Volga River, to the expansive grounds of 14th-century Pechersky Ascension Monastery, Nizhny Novgorod is an architecture buff's dream!

Take a Look Back in Time

Nizhny Novgorod's historical center is relatively large and well-preserved, but a stroll (or 10) through it isn't the only way to get a feel for the city's centuries-long past. Head to the Russian Museum of Photography, which not only showcases a variety of images of Nizhny Novgorod that date back a century or even longer, but also spotlights the equipment Russian photographers have used throughout the years, and notable figures in Russia's photography history as well.

Visit the Convent from the Movie "Salt"

You'd be forgiven if you've entirely forgotten the 2010 film "Salt." However, if you remember any destination from this spy thriller, it's likely the facade of Makaryev Convent, which is located within day-trip distance of Nizhny Novgorod. Having served as a monastery from its consecration in the early 15th century up until the beginning of the Russian Revolution, Makaryev became a convent after the fall of the Soviet Union , and is now home to 22 nuns.

Take an Excursion to a 12th-Century Tea Town

Another worthwhile day trip from Nizhny Novgorod is to the town of Gorodets, which sits about an hour to its northwest. With a history dating back to the 12th century, Gorodets boasts an interesting array of architecture and museums, including one dedicated to samovars.

Inside David and Victoria Beckham’s £5m luxury superyacht named after daughter Seven

  • Robert Mann

  • Updated : 21:20, 5 Apr 2022

DAVID and Victoria Beckham have been pictured onboard their stunning £5million superyacht as they prepare for their eldest son Brooklyn's wedding to Nicola Peltz next week.

Posh and Becks have jetted off on a luxurious holiday in the week leading up to Brooklyn's £3m wedding - and their stunning yacht has certainly caught the eye of many.

David Beckham has certainly gone overboard with his yacht costing nearly £5million

The former Spice Girl and her husband David were joined on their £5million yacht by two of their three sons Romeo and Cruz , as well as their ten-year-old daughter Harper .

The yacht has been aptly named Seven, after the former England player's shirt number - and it's also the middle name of their daughter.

The yacht is believed to be 93.5ft and the couple picked it up outside of their £19million Miami penthouse.

An onlooker told us in December: "David looked ecstatic as he took to sea on board his gleaming boat.

Nizhny Novgorod has been home to several prominent figures throughout its long history. Perhaps the one of the most influential for Russia as a whole was Kuzma Minin. Kuzma was a native of Nizhny Novgorod, making his living as a powerful merchant during the Time of Troubles, a sordid period of Russian history that began with the death of Tsar Fyodor I. His death marked the end of the Rurik Dynasty, leaving a void in Russian politics that inspired Russia’s enemies, both internal and external, to take action. In the midst of impostors to the throne, famines, and domestic revolts, the Polish-Lithuanian Army occupied Moscow in the early 1600s. Several localities, including Nizhny Novgorod, organized armies to defend themselves. Kuzma Minin was elected to oversee the funding of this army. His activity drew the attention of Prince Pozharsky, who joined his forces with Minin’s and marched on Moscow to expel the Polish-Lithuanian invaders. In 1612, they reached Moscow and turned the tide of the Polish-Muscovite War. Minin and Pozharsky had liberated Moscow from foreign clutches.

Their feat was commemorated by the construction of the Monument to Minin and Pozharsky, which was commissioned in 1812 to mark the bicentennial of this event, and was to be placed in Minin’s hometown of Nizhny Novgorod. However, Tsar Alexander I felt the statue was more appropriate for Moscow, where to this day it sits in Red Square, in front of St. Basil’s Cathedral. Luckily for the citizens of Nizhny Novgorod, a copy of this statue was erected in 2005, finally giving the city the recognition it had long been due.

The statue is situated on the aptly named Minin and Pozharsky Square, across from the Cathedral of the Birth of St. John the Baptist. Located in the center of the city, the square is an excellent place to begin your exploration of Nizhny Novgorod. The city’s main pedestrian zone begins shortly after the square, where you can enjoy many shops, restaurants, and street performers. Some of these specialize in folk products, such as handmade matryoshka dolls. The restaurants offer a wide array of cuisine, with Mir Pizzi (Pizza World), the Starbucks-esque Shokoladnitsa, and some sushi restaurants. Perhaps most importantly, the square is not far from the Nizhny Novgorod Kremlin, which is the focal point of the entire city. All in all, this monument and its square are the perfect place to familiarize yourself with what Nizhny Novgorod has to offer.
